    Creamy Cilantro-Avo Dressing

    Today we're talking homemade salad dressing. The ridiculously simple, fast, and delicious way to instantly transform a good meal into a want-it-gotta-have-it-again meal. This Creamy Cilantro-Avo Dressing is the perfect example of such recipe which makes the perfect topper for your next salad, omelet, or fajita night in no time flat.

    p.s. Cilantro haters, don't check out quite yet, we've got alternative flavors to try out. 

     

     

     

     

    Making dressings from scratch allows you to control what goes -and doesn't go- into your food. Many commercial dressings use added sugars, colors, and preservatives that just aren't necessary or especially beneficial for our health. Don't get us wrong. If you came to raid the Compston fridge today you would find a variety of bottled dressings and sauces. There are some great brands out there and they can definitely serve their purpose. Our point is, the more we can create using our own simple, whole ingredients, the better off we're likely to be. 

     

    Recipe

    This recipe is a simple one-two punch. Simply add the ingredients to a blender, blend, and you're off. Here are the main stars of the show:

     

     

    Now, if you're not a cilantro fan you may have either a) stopped reading already or b) be wondering how you can still make this recipe work for you. If you're in the 'b' category and are still invested, know that you can swap your some or all of the cilantro out for parsley, mint, basil, or any favorite herb of your choosing.


     

    For those on team cilantro, we're going to start by washing and rough chopping our cilantro. Cilantro is one of the only herbs whose flavor is also found in their stems, so we include them in recipes. If we're being honest, removing the stems is also a tedious step that we're more than happy to leave for our friend Mr. Blender. 

     

     

    Toss the cilantro into a blender along with yogurt, avocado, and the remaining seasonings. The yogurt can be swapped with dairy-free, low fat, full fat, or any variety you choose. Point being, you do you. Blend away until you reach a smooth, creamy consistency.

     

     

     

    You are done! Now, it's time to enjoy on just about any meal of your choosing!

     Ingredients

    ½ cup plain yogurt (dairy or non-dairy)
    1 avocado ⠀⠀
    1-2 cloves garlic ⠀⠀
    1 cup fresh cilantro, washed and roughly chopped ⠀⠀
    ¼ cup water
    Juice of 1 large lime (or 2 small)
    2 tablespoon ACV or red wine vinegar ⠀⠀
    ¼ teaspoon salt⠀⠀
    ⅛ teaspoon black pepper
    ⠀⠀

    Directions

    Add all ingredients to a blender and process until smooth. Add additional water, lime juice, or vinegar to thin as needed. You can substitute vinegar with more lime juice or even lemon juice for a different twist.

    Dressing will stay fresh for 3-5 days in an airtight container in the fridge.
