Grilled Sirloin with Mediterranean Farro Salad is a quick, colorful, weeknight meal the whole family will love!

Building Balanced Plates

Did you know: beef can be part of a healthy, balanced diet? It's true! Our favorite way to enjoy Sirloin is alongside grilled veggies and crisp, colorful salads. In the summertime, we always have some variation of a fresh grain or pasta salad on hand for quick and easy weeknight meals. Mediterranean Farro salad is a family favorite and can be thrown together with just about any veggies you have on hand! Our little ones love tricolor peppers, and, shredded spinach is a great way to introduce kids to salad greens. The fresh flavors of the salad are a perfect complement to a grilled steak.

Choosing Your Cut

We're big fans of Top Sirloin Steaks which tend to be both one of the more affordable, and leaner, cuts of beef. Each 3 oz. serving of Sirloin boasts 26 grams of lean protein, and is a good source of important vitamins and minerals like zinc, iron, choline, and B vitamins important for growth and development. This tender cut is also perfect for little eaters learning to chew!

When searching for leaner cuts, look for the words "round" or "loin" in the name. There are actually quite a few cuts (around 40!) that fall into that category! Selecting leaner cuts can help reduce the likelihood of having flareups when grilling. Trimming visible fat off the meat prior to grilling can also help.

Healthy Grilling Tips

Grilling can be a fun, flavorful way to enjoy summertime meals. Follow these simple tips to make your grilling experience an enjoyable one.

A Clean Grill - Regularly brush and oil grill grates to prevent buildup (which can lead to flareups). Setting your gas grills to "medium high" heat can also decrease your chances of charring meat. If using a charcoal grill, follow the directions for how much to use and how to appropriately build the charcoal pile.

It's important to clean grill grates before every use to remove any buildup that could create a flare up.

From Chill to Grill - For best food safety practices, it is recommended that meats go directly from fridge to flame. Once our grill is preheated, we grab our steaks, generously season, and toss them directly on the grill. If marinating beforehand, allow excess marinade to run off, or gently pat dry, before placing on the grill to avoid a flareup. Marinades with a higher sugar content are more likely to burn. If using a sweet glaze, wait until the last few minutes of grilling to brush onto your steak.

Dry rubs are perfect for tender Sirloins. We love a simple mix of salt, pepper, and garlic powder!

Hands Off! - Once your steak is on the grill, let it be! Frequently flipping or moving meat can increase the likelihood of charring or drying out your steak. Just one flip is all you need! Allowing meat to cook undisturbed will seal in those flavorful juices and allow that classic caramelization to form.

Once you place your steak, let it be! Flipping steak too frequently can dry out or char your beef.

A Perfect Pair! - Fruits and veggies make great grill companions. Asparagus, peppers, corn, onions, peaches, and pineapple are just a few favorites. Add produce during the final minutes of grilling as these tend to cook much faster than meats.

Don't forget: one flip is all you need for that perfect sear! You'll retain flavor and natural juice by letting steak be.

Finishing Touches

R&R - There's nothing like the scent of freshly grilled steak coming off the grill but let those babies rest! Resting time is important for sealing in those natural juices and allows cuts to stay tender. It's important to note that steak will continue cooking once removed from the grill (also referred to as carryover cooking) another 5-10 degrees higher once pulled off the grill. We like to pop a piece of foil or a lid cover over top which helps retain moisture.

Allow steak to rest for at least 5 minutes prior to slicing or serving. This locks in those natural juices and keeps meat tender.

Handle with Care - If slicing your steak prior to serving, go across the grain. This will make for more tender, juicy bites.

Ingredients

  • 1 lb Top Sirloin Steaks or other lean cut
  • 1 lb asparagus spears washed and trimmed
  • 2 tablespoon olive oil
  • ¼ teaspoon each, salt, pepper, and garlic powder for seasoning

Mediterranean Farro Salad

  • 1 ½ cups cooked farro or barley
  • 2 bell peppers diced
  • 2 cups fresh spinach thinly shredded
  • cup crumbled feta
  • cup kalamata olives sliced
  • 2 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • teaspoon dried basil, oregano, and parsley
  • salt and pepper to taste

Instructions

  • Preheat your grill to medium high heat.
  • Drizzle olive oil over steak and asparagus and season generously with salt, pepper, and garlic powder. Grill steak, covered, for 7 to 11 minutes for medium rare (145°F) doneness, turning once.
  • During the last 5-6 minutes, add the asparagus to the grill. Cook, flipping once, until slightly tender and golden.

Mediterranean Farro Salad

  • Cook farro per instructions. Once tender, rinse under cool water. Drain completely and combine with diced peppers, shredded spinach, feta, and olives.
  • Whisk together vinaigrette. Pour over salad and toss well to combine.
