- 1 lb Top Sirloin Steaks or other lean cut
- 1 lb asparagus spears washed and trimmed
- 2 tablespoon olive oil
- ¼ teaspoon each, salt, pepper, and garlic powder for seasoning
Mediterranean Farro Salad
- 1 ½ cups cooked farro or barley
- 2 bell peppers diced
- 2 cups fresh spinach thinly shredded
- ⅓ cup crumbled feta
- ⅓ cup kalamata olives sliced
- 2 tablespoon olive oil
- 2 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- ⅛ teaspoon dried basil, oregano, and parsley
- salt and pepper to taste
Preheat your grill to medium high heat.
Drizzle olive oil over steak and asparagus and season generously with salt, pepper, and garlic powder. Grill steak, covered, for 7 to 11 minutes for medium rare (145°F) doneness, turning once.
During the last 5-6 minutes, add the asparagus to the grill. Cook, flipping once, until slightly tender and golden.
Mediterranean Farro Salad
Cook farro per instructions. Once tender, rinse under cool water. Drain completely and combine with diced peppers, shredded spinach, feta, and olives.
Whisk together vinaigrette. Pour over salad and toss well to combine.
