Ingredients

  • 3 cups shredded rotisserie chicken
  • 2 apples, any variety, diced
  • 1 ½ cups matchstick or shredded carrots
  • 2 cups butter lettuce or baby spinach
  • ¼ cup fresh parlsey, roughly chopped
  • 4 whole wheat pita pockets

Cinnamon Spiced Dressing

  • ¾ cup Greek yogurt or mayonnaise
  • 2 ½ tablespoon rice wine vinegar
  • 2 tablespoon water
  • 1 tablespoon honey
  • tsp ground cinnamon
  • salt and pepper, to taste

Instructions

  • In a small bowl, whisk together dressing ingredients. Taste and adjust seasonings per preference; set aside
  • Dice apples and add to a large mixing bowl along with shredded chicken, carrots, and parlsey. Add dressing and toss well to mix.
  • Fill each pita pocket with a small handful of lettuce greens. Scoop salad mixture into pockets and serve immediately. Enjoy!

Notes

Note: if preparing ahead of time, keep salad mix and dressing separate. Just prior to serving, add dressing and toss well!
