  • 1 lb Top Sirloin Steaks or other lean cut
  • 1 lb asparagus spears washed and trimmed
  • 2 tablespoon olive oil
  • ¼ teaspoon each, salt, pepper, and garlic powder for seasoning

Mediterranean Farro Salad

  • 1 ½ cups cooked farro or barley
  • 2 bell peppers diced
  • 2 cups fresh spinach thinly shredded
  • cup crumbled feta
  • cup kalamata olives sliced
  • 2 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • teaspoon dried basil, oregano, and parsley
  • salt and pepper to taste


  • Preheat your grill to medium high heat.
  • Drizzle olive oil over steak and asparagus and season generously with salt, pepper, and garlic powder. Grill steak, covered, for 7 to 11 minutes for medium rare (145°F) doneness, turning once.
  • During the last 5-6 minutes, add the asparagus to the grill. Cook, flipping once, until slightly tender and golden.

Mediterranean Farro Salad

  • Cook farro per instructions. Once tender, rinse under cool water. Drain completely and combine with diced peppers, shredded spinach, feta, and olives.
  • Whisk together vinaigrette. Pour over salad and toss well to combine.
