Lean, Mean Turkey Meatloaf

Ingredients

  • 2 lbs. lean ground turkey
  • ½ yellow onion diced
  • ½ cup ketchup
  • ½ cup panko breadcrumbs
  • ½ cup shredded Italian cheese blend
  • ½ teaspoon salt
  • teaspoon dried rosemary
  • teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground pepper
  • 2 eggs

Instructions

  • Preheat oven to 375°F.
  • In a large mixing bowl, combine all ingredients. Mix together ingredients until well combined. Place loaf mixture into an ungreased pan and press down until evenly distributed. Spread a thin layer of ketchup over the top and cover pan with aluminum foil.
  • Bake for 45 minutes. Then, remove foil and bake for another 5-10 minutes to allow the ketchup to caramelize slightly.
  • Loaf should temp at 150°-155°. Cover again with foil and let sit for 10 minutes. Carry-over cooking will bring the loaf to a final temp of 165°. Careful not to overcook as lean turkey can dry out.
