Tropical Chia Pudding Parfait

A fun twist on a breakfast favorite that will transport you straight to the beach!

Ingredients

  • 2 tbsp. chia seeds
  • ½ cup Greek yogurt
  • ¼ tsp vanilla extract
  • 1 large kiwi peeled and sliced
  • cup pineapple diced
  • 2 tablespoon crushed walnuts and almonds
  • 2 tablespoon shredded coconut

Instructions

  • Place chia seeds into a mason jar or food container with a lid. Add milk and stir well. Place in the fridge overnight. If you are able, stir 1-2 times before going to bed o help break up any clumps.
  • In the morning, add yogurt to your chia mixture and stir well. Add fruit, nuts, and coconut and enjoy!
