Tropical Chia Pudding Parfait
A fun twist on a breakfast favorite that will transport you straight to the beach!
Servings: 1 serving
- 2 tbsp. chia seeds
- ½ cup Greek yogurt
- ¼ tsp vanilla extract
- 1 large kiwi peeled and sliced
- ⅓ cup pineapple diced
- 2 tablespoon crushed walnuts and almonds
- 2 tablespoon shredded coconut
Place chia seeds into a mason jar or food container with a lid. Add milk and stir well. Place in the fridge overnight. If you are able, stir 1-2 times before going to bed o help break up any clumps.
In the morning, add yogurt to your chia mixture and stir well. Add fruit, nuts, and coconut and enjoy!
