Autumn Chicken Waldorf Salad

What is it about the change in seasons that makes us want to “fall-ify” our food? You know what we’re talking about? Instead of marinara sauce we’re having pumpkin alfredo, squash fries replace potatoes, and don’t even get us started on lattes. Not that we’re complaining! We fully embrace flavors of the fall and were inspired ourselves to turn a classic quick dish into our own fall-ified meal: Autumn Chicken Waldorf Salad.

In an effort to make our recipes more affordable and simple to prep, we are highlighting recipes that feature some of our favorite pantry staples that can help get the job done for a fraction of the time and cost. Today’s recipe features an oft looked over item: canned chicken. While not something we reach for every day, canned chicken is affordable, nutrient dense, versatile, and incredibly convenient. We recommend looking for varieties with low to no added sodium, flavors, or preservatives when possible. Alright, on to the recipe.

In the spirit of keeping things simple this recipe can be broken down into 3 simple steps:

1. chopping (fruits and veggies)

2. whipping (together the dressing)

and 3. tossing together (all salad ingredients).

Oh, there is actually a step 4, eating. 


12 oz. canned chicken (can absolutely use fresh roasted if on hand)

3 celery stalks, sliced

2 small apples, gala or similar, diced

2 Bartlett pears, diced

1/3 cup pecans

1/2 cup mayonnaise, yogurt, or other mayo alternative

1 1/2 tsp rice or red wine vinegar

1/8 tsp ground cinnamon

Ground pepper, to taste

Pinch of nutmeg, optional 


In a small bowl, whisk together mayonnaise, vinegar, and cinnamon set aside. 

Wash and dice celery, apples, and pears. Add to a large mixing bowl with chicken and pecans. Add dressing and stir well to mix. Serve over a bed of mixed greens or on crackers. 

Note: Pears tend to soften faster than apples and celery so plan to consume within 1-3 days. The salad will still be edible but not as crisp on days 4 and 5.
